About the Recipe
A pestle and mortar is such an essential utensil in a Thai kitchen. We use it to make our homemade curry pastes and marinades. It’s such a simple tool that has been used since the Stone Age, but it is unrivalled in its ability to extract all the yummy juices and flavours from our ingredients and blending them. Here we are using it to pound garlic and coriander root to marinate our chicken wings and grilled chicken.
