Som Tam – this spicy and crunchy papaya salad is one of the best known dishes in Thai cooking. The skill lies in shredding the green papaya so it keeps its crunchiness, and the combining of flavours in the dressing, executed in masterly fashion by Thipwan, our salad chef. Its style can vary by region – sweet in the North, savoury with fermented fish and spicy in the Northeast. At Kaosarn we make our Som Tam in the style of central Thailand – well balanced, combining salty, sweet and sour, with a little kick of fresh chilli and garlic, and peanuts to add extra crunchiness.
